We typically raise Ringneck Pheasants through the summer to be ready for holiday feasting. The breed is an extra large variation of the Ringneck, providing a whole dressed bird of about 2.5 pounds. The meat is rich and flavor-dense, like duck, but with a slightly wilder flavor. Not gamey, just a little more wild tasting...and absolutely delectable!
The birds are raised in a large flight pen which is a space in one of our pastures that is completely enclosed with bird netting. Pheasants are extremely quick, agile, and strong flyers & keeping them around can be a real challenge!
We will not have Pheasant available in 2014, but plan to raise them again in 2015.
